Starter
Onion Bhaji
Deliciously crispy, golden onion bhajis packed with fragrant spices, fresh coriander and a gentle kick of green chilli. A mixture of red and brown onions is salted to release its natural moisture before being combined with gram flour and spices to create a flavourful batter. Double-fried for an irresistibly crunchy exterior and tender centre, these homemade bhajis are perfect as a starter, side dish or tasty snack.
Ingredients
- 3 onions (mixure of brown and red onions) sliced
- 1tbsp salt
- 2 green chillis finely sliced
- 140g gram flour
- 2tbsp corn flour
- 2-3tbsp chopped corriander
- 2tsp garam masala
Method
- Place the onions in a bowl and cover with the salt, cover with a tea towel and leave them for an hour. They will go all limp and the water in them will come out into the bowl
- Add all of the other ingredients to the bowl
- Add a little water if necessary - you are looking to create balls of the mixture that hold together
- Deep fry at 160 C for 4-5 mins
- Drain on some kitchen paper
- Deep fry again at 180 C for another 2-3 mins, draining again on kitchen paper
- Either serve immediately or keep warm in the oven until ready to serve
